Simple Greek Salad Recipe

This refreshing salad is made with tomatoes, cucumbers, red onion, bell pepper, feta cheese, and a simple drizzle of olive oil. I like to make mine extra tangy with a squeeze of lemon juice or a splash of vinegar. And don’t skip the finishing touch — a sprinkle of dried or fresh oregano on top!

Simple Greek Salad Recipe
Servings: 4
Ingredients:
- 4 large ripe tomatoes, quartered
- 1 large English cucumber, sliced
- 1 small red onion, thinly sliced
- 1 green or red bell pepper, sliced
- 1/4 cup of Kalamata olives
- 1/3 pound of feta cheese (you can use crumbled too)
- Dried oregano to serve
Dressing:
- Juice from 1 lemon or 2 tablespoons of vinegar
- 1/2 cup of extra virgin olive oil
- Salt & pepper to taste
Directions:
Prepare the vegetables. In a large bowl, add the tomatoes, cucumbers, bell peppers, and onions. Top with the olives and feta cheese. Mix the dressing ingredients in a mason jar or small bowl, and then pour over the top. Toss the salad together lightly and serve.
Notes:
For a slightly sweeter kick, you can add a tablespoon of honey to the dressing. If you want to add in some tangy kick, add 1 garlic clove minced.
Vinegar or lemon or both? That is really up to you. I love using either or and they both bring out the flavors of the vegetables!
We like to serve our Greek salad two ways. One, you can use crumbled feta cheese in the mix of the salad. The second way, more traditionally speaking you can place a block of feta cheese over the top to serve. Don’t forget the oregano!
