White & Black chocolate mousse

White & Black Chocolate Mousse

 

Ingredients:

Dark Mousse-

6 ounces bittersweet chocolate
1/2 cup milk
1 cup heavy cream, whipped to soft peaks, and if you do not know what soft peaks look like click this link –     http://www.youtube.com/watch?v=SEfO4cL-yqM

 

White mousse:
6 ounces white chocolate
1/2 cup creme fraiche
1 cup heavy cream, whipped to soft peaks

You will need 10 ramekins to place mousse inside or if you want to go fancy ten wine glasses. 🙂 Pipe the dark & white chocolate in each ramekin. It looks really nice when you intertwine the two colors.

Directions:

 

Dark Chocolate-  In a bowl over barely simmering water, melt the bittersweet chocolate. Heat the milk in a saucepan until almost simmering and whisk it into the melted chocolate. Fold the whipped cream into the chocolate mixture. Let cool slightly and transfer to a pastry bag. Refrigerate for at least 40 minutes to a hour. 

 

White Mousse: In a bowl over barely simmering water, melt the white chocolate. Heat the creme fraiche in a saucepan until almost simmering and whisk it in the white chocolate. Fold the whipped cream into the hot chocolate mixture. Let cool slightly and transfer to a pastry bag. Refrigerate for 40 minutes or up to a hour.

When the mousse is hardened serve and you can top it off with fresh mint leaves or shaved dark chocolate pieces. Enjoy and Kali Orexi!
