Today I am posting a recipe on authentic Greek Style Potatoes.  These can go great with practically anything, but we usually serve them with: spanakopita, rice, and chicken.

Greek Style Potatoes-  Patates sto Fourno

Prep time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour and 15 minutes

Ingredients:

5-6 potatoes, peeled and cut in to wedges

1/2 cup olive oil

1 tsp. dried oregano

2 garlic cloves minced

3 lemons, juiced- plus leave another lemon for serving

1/2 cup chicken broth

Sea Salt and freshly ground black pepper to taste

Preheat the oven to 400 degrees. In a mixing bowl, add the potatoes and then the rest of the ingredients. Toss and mix the ingredients well into the potatoes so that they are well coated. Get a baking pan, and lightly grease the pan with olive oil. Add the potatoes to the baking pan and then use the remaining marinade to add to the top of the potatoes. Bake at 400 degrees for about an hour and turn the potatoes half way, so each side gets brown. When removed from oven, add a bit of sea salt and pepper and dress with more lemon juice.

Tips- You can try adding a bit of rosemary or even lavender flowers to your potatoes.

Gives it a nice aroma.
