A traditional recipe from my dad’s village in Mani, Greece

This recipe goes way back in time and I asked my dad to come up with a few traditional recipes and here is one of them. 

This comes from My dad’s home town, Mani.

Maniatiko Chirino Me Patates-( Mani Roasted Pork with Potatoes Recipe)

Ingredients-

2 pounds of pork, rinsed and sliced

5 large potatoes, peeled and sliced, and cut into 2 inch pieces

1 cup of extra virgin olive oil

salt & pepper

1 garlic- minced

6 tbsp of dried sage

1 tsp of oregano

2 cups of fresh orange juice

one lemon- (use the zest of the lemon and keep the juice aside.)

1/2 cup of white wine

1/4 cup of honey

Directions-

Place pork in a baking dish set aside.   Mix all of the ingredients together in a separate bowl, then add to the pork. Let marinade for about 10 hours in the refrigerator. When ready to bake, place oven temperature on 350 degrees or 180 celcius. Place in the middle rack of your oven and bake for about 50 minutes. Remove from oven and serve with fresh lemon juice.
