We are trying something a little different this time. Today’s  featured Thursday recipe is a Greek sweet. One of my favorites, and I haven’t seen this recipe in ages. Try it out and let me know your thoughts.

Honey and Cheese Cake Recipe- Sifnopitta
Ingredients:

2 cups of plain flour, sifted with a pinch of salt
2 tbsp of white sugar
1/2 cup of unsalted butter at room temp
3-4 tbsp of cold water

For the filling:
4 eggs
1/4 cup of sugar
1 tablespoon of plain flour
2 1/2 cups of fresh ricotta or Mizithra cheese
4 tablespoons of honey
1/2 tsp of ground cinnamon
1 tsp of vanilla

Directions:

Prepare and line with a greased baking paper and place in a 10 inch spring form pan. In a medium size bowl, mix the flour and sugar and cut in the butter into cubes and add to the flour mixture. With your finger tips, rub the butter into the flour mixture.

Add the water, a little at a time, until the mixture forms a dough. Making sure it isn’t too wet, wrap the dough with plastic wrap and set aside in the refrigerator.

Preheat the oven to 350 degrees or 180 celsius. Roll out the pastry dough on a lightly floured surface. Place in a baking tin, and making sure the pastry dough goes all the way up on the sides of the tin.

Prepare the filling:

In a large bowl, beat the eggs. Add the sugar and flour and beat until light and fluffy. Add in the cheese, honey, cinnamon, and vanilla and mix well. Pour in the mixture into the baking tin, and bake for about 1 hour or until golden brown. To serve, drizzle some cinnamon and honey on the top.
