This recipe came all the way from Thessaloniki!
We are trying something a little different this time. Today’s featured Thursday recipe is a Greek sweet. One of my favorites, and I haven’t seen this recipe in ages. Try it out and let me know your thoughts.

Honey and Cheese Cake Recipe- Sifnopitta
2 cups of plain flour, sifted with a pinch of salt
2 tbsp of white sugar
1/2 cup of unsalted butter at room temp
3-4 tbsp of cold water
For the filling:
1/4 cup of sugar
1 tablespoon of plain flour
2 1/2 cups of fresh ricotta or Mizithra cheese
4 tablespoons of honey
1/2 tsp of ground cinnamon
1 tsp of vanilla
Prepare and line with a greased baking paper and place in a 10 inch spring form pan. In a medium size bowl, mix the flour and sugar and cut in the butter into cubes and add to the flour mixture. With your finger tips, rub the butter into the flour mixture.
Add the water, a little at a time, until the mixture forms a dough. Making sure it isn’t too wet, wrap the dough with plastic wrap and set aside in the refrigerator.
Preheat the oven to 350 degrees or 180 celsius. Roll out the pastry dough on a lightly floured surface. Place in a baking tin, and making sure the pastry dough goes all the way up on the sides of the tin.
Prepare the filling:
In a large bowl, beat the eggs. Add the sugar and flour and beat until light and fluffy. Add in the cheese, honey, cinnamon, and vanilla and mix well. Pour in the mixture into the baking tin, and bake for about 1 hour or until golden brown. To serve, drizzle some cinnamon and honey on the top.

I have spent time in Thessanloniki too. A wonderful place. I also spent several weeks on Siphnos on a few occasions. (No, I am not Greek, just had some greek friends with loads of family who hosted us!) Another think in common with you…my dad lives in Sacramento! 🙂

Lol really?! Im off hazel near 50. Small world. I went to Ponderosa, my parents use to have a house in Rescue and they are lavender farmers. We have had Friends Of The Earth Lavender for over 13 yrs now and my dads a landscaper of over 45 yrs in the Sacramento area. Seattle huh? My moms side lives in Kent and my best friend lives in Yakima. What brought u up there? Very cool to meet you, and tell your dad I opened up a Greek catering business here. 🙂
Btw- my dad is from Greece, I was born here but we are a very strong Greek family, and I use to live in Greece. I usually visit every year.
