~Friday Menu~ Chicken Kabobs, rice pilaf, and a secret dessert.

Yay today is Friday!!! What are your weekend plans??

This menu today would go great for any outdoor barbeque or event. See below for the Friday menu. 🙂

 

~Friday Menu~

Side Dish: Rice Pilaf

Main entree: Chicken Kabob marinated in a honey & thyme barbeque sauce

Dessert: Chocolate Tart

 

 

Side Dish – Rice Pilaf

Ingredients:

3 tablespoons butter
2 garlic cloves, peeled and minced
1 1/3 cups uncooked long-grain rice
3 cups chicken broth
2 teaspoons grated lemon zest
pinch of sea salt
1 lemon- juiced

Melt butter in a saucepan, with a lid.

Add in the garlic and rice. Stir frequently and add in the broth and lemon zest. 

Bring to a boil and simmer , making sure the pot is covered for about 20 minutes. 

Remove from heat and add in the lemon juice and salt. Top it off with some fresh parsley.

 

Honey & Thyme Chicken Kabob Recipe-

Ingredients:

4 skinless, boneless chicken breasts, cubed

skewers

1 large red bell pepper, cut in cubes

1 large white onion, cut in wedges

Sauce-

  • 1/4 cup grey poupon mustard
  • 1/4 cup honey
  • 2 Tbs. pf shallots, finely diced
  • 1/2 tsp. sea salt
  • 1/4 tsp. freshly ground black pepper
  • 3 tsp. chopped fresh thyme

Directions:

In a medium size bowl, whisk all ingredients together, and set aside. 

Kabobs- Directions

Preheat oven, or barbecue and marinate the chicken cubes and vegetables in the sauce.

Marinate for about 45 minutes and chill in the refrigerator. 

With the skewers, thread the onion, bell pepper, and chicken. Repeat the process.

Place on a well heated barbecue, for about 15 to 20 minutes. 

 

I saved the best for last!!! This yummy and easy treat is a must try.

 Chocolate Tart Recipe-

Ingredients:

  • 1 1/2 cups heavy cream
  • 2 shots hazelnut liqueur/ or kahlua liquer
  • 1 prepared chocolate tart
  • 1 bar of bittersweet chocolate, or milk chocolate 

Directions:

In a mixer bowl, whip the cream until soft peaks form. Next, fold in the liqueur. 

Prepare your tart, and with a spatula, spread the cream onto the tart. Next add some chocolate shavings to the top.
