Creamed Spinach with Greek yogurt!! Oh yeah!!
I think most of you probably have noticed that I am starting to post healthier recipes. Yes, I love making healthy recipes, and good ones!! I love creamed spinach and thought why not use Greek yogurt this time, instead of the fatty ingredients. lol
It totally worked out and my family loves it!! Check it out below.
Creamed Spinach Recipe-
Ingredients:
1 tablespoon of butter
2 tablespoons of AP flour
2/3 cup of chicken broth
1 large bag of spinach, fresh or frozen, (12 oz)
1 garlic- minced
2/3 cup of Greek yogurt
sea salt & ground pepper to taste
Directions:
In a saucepan, melt the butter and add the flour and whisk to make a roux. Slowly whisk in the chicken broth and stir to combine. Bring to a boil and then reduce the heat to simmer and add the spinach. Cook until the spinach is wilted, and add in the garlic, yogurt and seasonings. Cook for about 2 minutes, then remove from heat and serve.
