This recipe is very easy to make! I came up with this recipe today. We had an abundance of bell peppers and some extra artichokes around the house so this is what I came up with.
Paired perfectly with pita chips or sourdough bread. 🙂
Bell Pepper & Artichoke Dip Recipe-
1 jar of marinated artichoke Hearts, drained
1/2 cup drained roasted red bell peppers (from 7-oz jar)
1 package (3 oz) cream cheese, softened
1/2 cup sour cream or 1/2 cup of Greek yogurt
1/4 cup of chopped fresh parsley
sea salt and ground pepper to taste
1/4 cup of feta cheese
1/4 cup of mozzarella cheese
2 garlic cloves- peeled and minced
In a food processor, add the artichokes and peppers. Chop both ingredients and pulse until combined. Then add in the cream cheese, sour cream, parsley, garlic, and seasoning. Once all combined, place in bowl and add in feta and mozzarella.
In a baking dish, add the dip, and spread it out evenly with a spatula. Bake for about 20 minutes or until golden brown on top.
