Flavors Of Brazil

Ginger Caipirnha Recipe Cocktail

Ingredients:

  • 1.5 oz Leblon
  • .5 oz ginger liqueur
  • 2 lime wedges
  • top with lemon-lime soda

Directions: 

  1. Fill a highball glass with ice.
  2. Pour the leblon, and ginger liqueur over ice.
  3. Squeeze 2 lime wedges over the leblon.
  4. Top it off with lemon-lime soda.

Acaraje: Brazilian Black Eyed Pea & Shrimp Fritters

This appetizer is popular and known as ”street food”, in Brazil. These are also popular on the beach.

Filling Ingredients:

  • 1 onion
  • 1 teaspoon chile powder
  • 1 cup small shrimp, fresh or frozen. (Make sure to devain.)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Fritter Ingredients: 

  • 2 cans black-eyed peas
  • 2 cloves  garlic
  • 1 onion
  • 1 small chili pepper
  • 2 tablespoons flour
  • Salt and pepper to taste
  • extra virgin olive oil for frying

Directions:

Prepare Filling:

  1.  Dice the onions and place into a saucepan with olive oil, over medium heat.
  2. Once onions are golden, sprinkle salt and chili powder over them.
  3. Add in the shrimp, and cook until shrimp are pink in color.
  4. Remove from heat, and season with salt and pepper.

Prepare Fritters: 

  1. Drain the black eyed peas and place them into a food processor.
  2. Chop the onion and garlic and add to the peas.
  3. Clean the chile and add to the food processor.
  4. Process mixture until well blended.
  5. Add in the flour to the mixture, and keep adding flour until the mixture holds a shape.
  6. Divide the dough into 15 round balls.
  7. Fry the balls in a saucepan, with olive oil.
  8. Fry over medium heat, until each side is golden brown.
  9. Once done, drain the fritters over a plate lined with paper towels.
  10. Split fritters in half, and add the shrimp and onion mixture to the center.
  11. Serve warm.
