Vegetable Coconut Soup Recipe
Ingredients:
- 1 can coconut milk
- 1 tablespoon olive oil
- 3 cups fresh spinach
- 1 cup shredded carrot
- 1 cup boiling water
- 1 garlic clove minced
- 2 tablespoons green Thai curry paste
- 1 1/2 teaspoons vegetable bouillon
- 1/4 cup white wine
- * For spicy you can add a few red pepper flakes
Directions:
- In a medium size saucepan, add in the olive oil, and curry paste. Whisk to make a paste.
- Add in the coconut milk, and wine.
- Cook over medium heat for 1 minute.
- Add spinach, carrots, and garlic to the saucepan.
- Add vegetable bouillon, and the boiling water to the pan.
- Bring soup to a boil, and then turn down the heat and simmer.
- Simmer for 10 minutes, until the vegetables are soft.
- Once the mixture is done cooking, let cool.
- Add mixture to a blender, in 3 different batches.
- Blend until well combined.
- (If you wish, you can add the red chili pepper flakes. For a spicier kick.)
Serve warm.. You can add toasted coconut to the top for an additional coconut flavor. 🙂
