Vegetable Coconut Soup Recipe

Ingredients:

  • 1 can coconut milk
  • 1 tablespoon olive oil
  • 3 cups fresh spinach
  • 1 cup shredded carrot
  • 1 cup  boiling water
  • 1 garlic clove minced
  • 2 tablespoons green Thai curry paste
  • 1 1/2 teaspoons vegetable bouillon
  • 1/4 cup white wine
  • * For spicy you can add a few red pepper flakes

Directions:

  1. In a medium size saucepan, add in the olive oil, and curry paste. Whisk to make a paste.
  2. Add in the coconut milk, and wine.
  3. Cook over medium heat for 1 minute.
  4. Add spinach, carrots, and garlic to the saucepan.
  5. Add vegetable bouillon, and the boiling water to the pan.
  6. Bring soup to a boil, and then turn down the heat and simmer.
  7. Simmer for 10 minutes, until the vegetables are soft.
  8. Once the mixture is done cooking, let cool.
  9. Add mixture to a blender, in 3 different batches.
  10. Blend until well combined.
  11. (If you wish, you can add the red chili pepper flakes. For a spicier kick.)

Serve warm.. You can add toasted coconut to the top for an additional coconut flavor. 🙂
