Gourmet Limoncello Cake
Yes, you read the title right!! Limoncello cake it is today. 🙂
What is Limoncello you might ask?? Limoncello is an Italian liquor made of lemon peel, lemon zest, vodka, and simple syrup. Limoncello is the second most popular liquor in Italy! The Italians know what’s up with their liquors. 🙂
My parents made a huge batch of limoncello last month, and it’s going fast! I love the flavor that limoncello has! In fact before I made this marvelous cake, I made a savory chicken dish with limoncello. Have fun in the kitchen, experiment with a variety of liquors and see what recipes you come up with. Now that we have limoncello down, let’s get to the baking!
|Limoncello Cake Recipe|
🍋Perfect for the lemon lovers🍋
Ingredients:
- 1 cup plain Greek yogurt
- 2 eggs room temperature
- 3/4 cup granulated sugar
- 2 tsp vanilla flavoring
- 1/4 cup coconut oil
- 3 tablespoons limoncello/ if your limoncello is super strong, you can cut it down to 2 tablespoons
- 1.5 tablespoons lemon zest
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- Optional: toasted almonds
- Pinch of sea salt
- 1 cup powdered sugar
- 2 tablespoons limoncello
- Zest of 1 lemon
Method:
Pre heat oven to 350 degrees. Lightly grease a bundt cake and set aside. (Now this is where we go to My Big Fat Greek Wedding #1. “Einai bunt Cake Moriee.” Lol
Add the first 7 ingredients to a mixing bowl. Use the whisk attachment, and combine all ingredients. Whisk for a few minutes until combined.
Add the dry ingredients to a bowl, and mix to combine. (Baking powder, baking soda, almonds, and salt.)
Add the flour mix to the wet mix and combine.
Pour the batter into a greased bundt cake pan. Place in oven and bake until golden brown.
While cake is baking, whisk the powdered sugar, limoncello, and lemon zest.
Drizzle the lemon sugar syrup over the cooled cake.

For the oil of course. You can use vegetable/ canola oil/ or even a light olive oil. Good question too!

I have never made my own vodka cream tomato sauce, but I did make a Bloody Mary beef stew recently with vodka! I’ve only every had that kind of sauce at a restaurant, I guess I’ll have to make my own. 🙂
