Zucchini Pizza Crust~ Vegetarian Friendly

Happy weekend foodies!! Oh do I have a perfect recipe for you.

The past week we had an abundance of amazing fresh zucchini. I have been experimenting tons with different recipes, and excited to share a new one with you! If you have some extra zucchini, TRY this recipe.

 

Zucchini Bruschetta Pizza Recipe

Ingredients:

  • 2.5 cups shredded zucchini
  • 1 egg
  • 1/3 cup Greek yogurt
  • 1/2 cup all purpose flour
  • 1 Pinch sea salt
  • 1 tsp Herbs De Provence spice
  • 1 cup Parmesan cheese
  • 1 cup shredded Gouda cheese
  • 1/4 cup Kalamata olives
  • 4 roma tomatoes, reserve 2
  • 1 can tomato paste
  • 2 garlic cloves  minced
  • Fresh basil chopped

Method:

In a large bowl, combine the zucchini, egg, and yogurt. Add the flour, salt, and herbs de provence to the liquid mixture, and combine until it forms a dough.

Place dough onto a pizza stone, if available. Bake at 450 degrees, for 12 minutes or until the dough is golden brown underneath. Remove pizza dough from oven, and add your pizza sauce, and ingredients. Bake for 15 minutes, or until cheese has melted.

Serve with fresh basil over the top. 🙂

Pizza Sauce:

In a blender, add the tomato paste, 2 tablespoons of olive oil, garlic, and 2 tomatoes. Drizzle over pizza crust before you add your toppings.
