~Happy Cinco De Mayo Guacamole~
Happy Cinco De Mayo Friends!! I hope you enjoy this day with plenty of yummy food and cervezas. LOL
I had to make something for this fun festive day, so here it is.
Minty Guacamole Recipe
- 3 avocados – Pitted
- 1/4 cup fresh mint leaves
- 3 limes
- 1 teaspoon red pepper
- 1/4 cup diced onion
- 2 Roma tomatoes
- 2 garlic cloves
- Pinch sea salt
- White Pepper to taste
Directions:
In a food proccessor, pulse all ingredients until everything is chopped. I like to blend mine pretty well, but some people liketheir guacamole with lots of texture, and that is fine. I top my guacamole off with a teaspoon of fresh lime juice and a dash of sea salt.
Wow mint instead of cilantro, that’s new to me! I bet it tastes delicious, of course. 🙂 Happy Cinco de Mayo!

Hi, this looks fab. Limes are not available here in Crete although the avocado we get from the local markets are huge and creamy. I’ll try this with lemon juice instead and see how that works out. X
