Fluffy Pita Bread Recipe

Ingredients:

  • 1 cup warm water
  • 2 cups all-purpose flour
  • 1 cup of semolina (reserve more for dusting)
  • 1 teaspoon of sea salt
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey or sugar
  • 2 teaspoons active dry yeast
  • Greek marinate – 1/4 cup of Greek olive oil- 3 tablespoons of lemon juice- 2 teaspoons of oregano- 1 teaspoon of salt

Optional: You can add any herbs or spices to this recipe for additional flavor.

You can also replace olive oil with either grape seed oil or avocado oil.

Directions:

  1. In a bowl of a stand mixer place the yeast, honey, and warm water together and slightly mix. Let the mixture sit for 5 minutes until light and bubbly.
  2. Once the mixture is foamy, add the flours, olive oil, and salt. Mix while using the dough hook attachment. Mix for about 7-8 minutes until the dough is smooth. You can also make this by hand.
  3. Place dough inside a lightly greased bowl, and cover it with plastic wrap. Let the double in size in a warm place in your kitchen.
  4. Place dough on a lightly floured surface.
  5. Gently roll and stretch the dough into a 12-inch rope.
  6. With a sharp knife, divide the dough into 10 pieces.
  7. Roll each piece into a small ball.
  8. With your hand or rolling pin, make each ball into a 7-inch circle.
  9. Place the dough onto a baking sheet, and cover it with a towel.
  10. Let the pita rise for about 10 minutes or until puffy.
  11. Place pita bread directly on a BBQ mat, and let it cook until it puffs up on each side. You can brush the marinate over the bread while it is cooking for extra flavor!
  12. If using the stovetop, warm a skillet over medium heat with olive oil.
  13. Place pita in a pan and cook until golden and puffy on each side. You can brush the marinate over the bread while it is cooking for extra flavor!
  14. Remove from the pan and enjoy. Store the pita in a sealed container.

  1. I just want you to know that I have made your bread 3 times already and will continue to make it. I played around with the flour a few times. I used organic white whole wheat flour the first time (worked well). I used Kamut and it worked great (I did increase the water for the kamut to 1 1/4). I tried it with gf flour but that needs work. Thank you so much for sharing. I have shared a link to Elaine’s post on Welcome to Abby’s Kitchen fb page a few posts back where she links the recipe to you. I look forward to browsing your blog for more great ideas (I’m hoping you have some meat & dairy free traditional Greek dishes to try. Our family has transitioned to a whole foods plant based diet, and we have eliminated meat & dairy from our diet. Anyways, a particular movie comes to mind. I’m pretty sure you’ve watched “My Big Fat Greek Wedding”. One of my favorite clips, “What do you mean you don’t eat meat? That’s ok I make you lamb” LOL 😉

I absolutely adore Elaine and glad I met you through her. I slowed down a bit with recipes since I am in Hawaii but thinking to post a few native to Maui. I will try to post some vegetarian recipes for you when I get back to Cali. Lol I love that movie and it’s one of my favorites. Every time I tell someone I’m Greek they bring that movie up Haaa. Too funny. 🙂

  2. Wow, have just been sent here from Elaine’s blog! These look delicious! I want to try them out as well but have to make them gluten free. Do you have any idea what gluten free flour(s) would be best to get them right? If not, no problem- I’ll just have to experiment! Just thought I would ask in case! 😉

      To answer your question I haven’t tried making a gluten free pita bread recipe quite yet. I have been doing my research and it seems that any gluten free recipe involves many other ingredients and I would have to switch the recipe a bit, but I will let you know when I do that, and I will be glad to share with you. 🙂 Are you doing only gluten free recipes?

      • Thanks for that 🙂 I will try myself anyways no worries. Will post if any of my experiments work! Yes, my recipes are gluten, dairy, and refined sugar free as I’m on the paleo diet 🙂
