Tomato Rice (Greek Style) 

A few days ago my friend Nikki, from the U.K. inquired about a Greek Tomato Rice Recipe. I usually prepare this specific dish with orzo; however, traditionally my yiayia made it with rice. Below, you will find the ingredients and instructions to prepare this delicious meal.

Tomato Rice Recipe (Greek Style)

Ingredients: 

Method: 

  1. Heat a saucepan with olive oil over medium heat. Add the onion, leeks, and garlic. (Saute until the onions are translucent.)
  2. In a blender, blend the roma tomatoes, canned tomatoes, garlic, and wine until smooth. Add this sauce to the onion mixture over medium heat. Cook just until sauce has thickened a bit. ( I find that this method gives this dish a really rich tomato flavor.)
  3. Add the rice, and 2 cups water. Stir just until all ingredients are well combined.
  4. Reduce heat to low, and cover mixture. Cook for about 18 minutes, or until rice has cooked.
  5. Add spices, and cover the mixture for 5 minutes to let the spices absorb into the mixture. Season, and serve with a drizzle of olive oil.
