Moist Marbled Banana Bread (Eggless)

Happy weekend my friends. I hope you are enjoying your weekend and maybe it’s filled with yummy eats? What are you cooking?

On today’s post, I wanted to share a NEW banana bread recipe that involves chocolate and vanilla cake that is intertwined together to make this delicious marbled effect. I hope you enjoy as much as my Instagram friends did. 🙂

Moist Marbled Banana Bread (Eggless)

Ingredients:

  • 4 medium ripe bananas
  • 1 1/2 cups of all purpose flour
  • 1/2 cup of olive oil
  • 1/2 cup of brown sugar
  • 1 teaspoon of vanilla flavoring
  • 2 tablespoons of Greek yogurt
  • 1/4 teaspoon of cinnamon powder
  • 1/4 teaspoon of cardamom powder
  • 4 tablespoons of chopped walnuts
  • 1/4 cup of cocoa powder
  • 1.5 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 pinch of sea salt

Method:

  1. Preheat oven to 350 degrees or 180 C. Grease a medium size bread tin.
  2. In a large bowl, mash the bananas and sugar together until combined. Add the olive oil, Greek yogurt, vanilla, cinnamon, and cardamom.
  3. In another bowl mix together the flour, baking soda, baking powder, and salt.
  4. Fold the flour mixture into the wet mixture. Add the walnuts in and gently fold to combine.
  5. Divide the mixture in half and add the cocoa powder to one bowl and mix to combine.
  6. Place half the vanilla mixture into the baking pan, and alternate with chocolate mixture. Swirl the two colors together with a wooden stick or paring knife.
  7. Pour the mixture into the pan. Bake in the oven for 35 to 40 minutes until a toothpick in the center comes out clean.
  8. Remove from oven and let cool. Enjoy!
