November Superfood Week Day 6

I am very happy to have my friend Eugenia Makrogianneli from Eat Yourself Greek blog join us for day 6 of our superfood week. Today Eugenia is focused on the superfood ingredient pomegranate! Pomegranate is one of those superfoods I want to say that is the hidden fruit of the holidays. As Eugenia put it, pomegranates are not only delicious but they hold a bag of antioxidants and are a source of fiber, B vitamins, vitamin C, vitamin K, and potassium. Pomegranates also play a huge role in our Greek culture during the New Year. To this day, my father will have at least 2 or 3 pomegranates in the kitchen in hopes it brings a good new year for all of us. Eugenia brought a delicious recipe to this event. Roasted pumpkin with pomegranate and cream of feta recipe. This would go perfect on any holiday table, and very easy to make too.
