Croissant Blueberry Lemon Bread Pudding

Where are my croissant fans at?? I am a HUGE croissant lover and I love making them. I need to make my croissants again because I miss the process.

I created a really fun bread pudding using day-old croissants from Costco. If you know Costco croissants, well we always have a few leftovers and I don’t want to toss them. One of my favorite muffin flavors is lemon blueberry, and that is exactly the flavor I am going for today with the bread pudding.

Croissant Blueberry Lemon Bread Pudding Recipe

Servings: 5-6

Ingredients:

  • 4-5 day-old croissants
  • 3/4 cup heavy cream
  • 1/2 cup milk
  • 2 eggs
  • 1/2 cup of organic sugar
  • Pinch of sea salt
  • 1 teaspoon of vanilla flavoring
  • 1/2 lemon reserve the zest
  • 1/2 cup of blueberries ( I used 1/4 because I didn’t want too many)

Method:

  1. Prepare the croissants by cutting them into cubes. Place the croissants inside a 9-inch baking pan making sure to grease the inside. Set aside.
  2. In a large bowl whisk together the milk, cream, sugar, and eggs. Add the vanilla flavoring, lemon zest, and salt. Mix to combine. I like to pat down the bread and egg mixture with the back of my wooden spoon. Let the mixture soak in a minute or two.
  3. Sprinkle the blueberries over the mixture. Bake the bread pudding in the oven at 350 degrees for approximately 30 minutes or until golden brown. If you find that the mixture is getting too brown on top, place foil over the top.
  4. Remove from the oven, and slightly cool down. Serve with powdered sugar and vanilla ice cream.
