Aromatic Rosemary Chocolate Chip Vasilopita Recipe

Wishing everyone much success, health, and happiness. I’m sharing a delicious NEW vasilopita recipe. I love adding my twists to traditional recipes, so here’s a fun one. Rosemary & chocolate have been a favorite combination of mine for many years. When you add these ingredients to vasilopita it’s such an aromatic cake. Aromatic Rosemary Chocolate Chip Vasilopita Recipe

Servings: 6-8
1 vasilopita

 

Ingredients:

  • 1 cup of butter (2 sticks unsalted)
  • 2 1/2 cups of flour (all-purpose)
  • 1 tablespoon of baking powder
  • 1 pinch of finely ground sea salt
  • 1 lemon (reserve zest)
  • 2 teaspoons of vanilla extract
  • 3 eggs
  • 1/2 cup of milk
  • 1/4 cup of Greek yogurt (plain)
  • 2 tablespoons of rosemary- finely chopped
  • 3/4 cup of chocolate chips (semi-sweet or dark chocolate)
  • 2 cups of powdered sugar
  • 1/4 cup of granulated sugar
  • Lucky coin wrapped in foil
  • Simple syrup for the cake (Equal parts water & sugar) 

Method:

  1. Sift together the flour, baking powder, and salt on parchment paper. Set aside.
  2. In a large mixing bowl mix the butter until creamy and then add the powdered sugar. Mix until very fluffy and creamy.
  3. Add the eggs one by one then add the vanilla and zest. Blend until combined.
  4. Add the milk and yogurt. Whisk to combine.
    Add the flour mixture along with the rosemary & chocolate chips. Fold to combine. Don’t overfold as that will result in a dense cake.
  5. Wrap the lucky coin in foil. Set aside. 
  6. Grease the inside of the cake tin.  Pour the mixture inside the cake pan making sure it is even. 
    Add the lucky coin to the cake pan making sure it’s covered. 
  7. Bake at 350 degrees for approximately 25 minutes or until a toothpick inserted in the center comes out clean. Don’t overbake and then remove from oven. Let the cake cool down. With a toothpick poke a few holes over the top of the cake. Then brush the simple syrup over the cake. This keeps the cake from becoming dry. 

Notes:

Tightly wrap the cake with plastic wrap and then foil. You can keep the cake for up to a few days. If you find the cake is too dry, heat it up in the microwave for a few seconds. 

We typically serve Vasilopita with powdered sugar and a decorative “2023” design. Pomegranates are a sign of good luck, so use some pomegranate seeds for decoration in the mix.

  1. In yur recipe you are not giving us the amoiunt of rosemary or chocolate chips required, otherwiwe it souds as a refreshing taste. I used rosemary in other recioes and I love itThank you .

    • Hello Julia. Thank you for stopping by my food blog. Rosemary & chocolate chips should have been in the ingredient list, but here it is.

      3/4 cup of semi sweet or dark chocolate chips
      2 tablespoons of finely chopped rosemary
