Mushroom Risotto Recipe

This is one of my favorite recipes of all time. You can pair this delicious risotto with practically everything.
Mushroom Risotto Recipe

Ingredients:
- 6 Cups chicken broth
- 1 pound of porcini mushrooms
- 4 tablespoons of extra virgin olive oil
- 2 shallots, diced
- 1/4 cup white onion, diced
- 1 1/2 cups of Arborio rice
- 1/2 cup dry white wine
- Sea salt & black pepper
- 4 Tablespoons of butter
- 1/3 cup of Pecorino Parmesan cheese
- Fresh chopped parsley
Method:
- In a saucepan add the olive oil and chicken broth over medium.
- Stir in the mushrooms and cook until mushrooms are soft.
- Remove mushrooms and liquid and set aside.
- Add in onion and shallots. Cook 1 minute and add rice and cook for about 3 minutes.
- Once the rice is golden in color, pour in wine, and stir. Add broth to rice mixture and stir continuously until liquid is absorbed. Cook rice for about 20 minutes or until rice is “al dente.”
- Remove from the heat, and stir in the mushrooms, butter, and parmesan.
- Season with salt and pepper. Serve with fresh diced parsley.
