Happy Monday folks! I hope you are doing well.

I really enjoy helping friends of mine with Greek recipes. My friend in Nafplio just reached out and asked me for a Greek yogurt recipe. I have made this DELICIOUS recipe a few times, years ago. It’s so easy to make and really worth it. Please do have a few cheesecloths available in your kitchen. (It will help you immensely when straining out the liquid whey.) If you don’t have cheesecloth you can definitely use cut up clean nylon stockings. I know this sounds weird, but it works.

Greek Yogurt Recipe

Ingredients:

Method:

  1. Mix together the 2 tablespoons of milk, the heavy cream, and 2 tablespoons of the yogurt. Set aside.
  2. In a large pot over medium heat, add the remaining milk and cook until it comes to a boil.
    Remove from the heat, and let cool.
  3. You want the yogurt to be at 100 degrees F. Make sure to do a test with a thermometer to make sure it is at the right temperature. Once it reads 100 degrees, then pour the yogurt milk mixture in. Gently stir the mixture and then cover with a kitchen towel and place inside the oven. (Any place that is warm will do.)
  4. Let the yogurt sit covered for 15 hours or until the mixture has thickened and there is a thick skin over the top of the milk. Once the yogurt is ready, be prepared to get your cheesecloth ready.
    Place cheesecloth in a large bowl and then carefully ladle the yogurt inside. Leave the cheesecloth with the yogurt inside and cover with plastic wrap and chill for 5 hours. This will allow the whey (liquid) to drain.
    Remove from the refrigerator and strain out the liquid.
  5. Transfer the yogurt to a container and seal with lid. Chill in the refrigerator.
    Enjoy yogurt chilled with honey and fresh fruit.
  6. If you want to make more yogurt, reserve 2 tablespoons of your homemade yogurt. This will help kickstart new batches.
