Here’s a recipe for Feta Stuffed Biftekia with Lemon Potatoes—a delicious Greek dish that combines juicy, feta-stuffed meat patties with perfectly roasted lemon potatoes.

Feta Stuffed Biftekia with Lemon Potatoes

Servings: 4-6

Ingredients

For the Biftekia (Meat Patties)

  •  1 lb ground beef & pork (you can use lamb if you like too)
  •  1 small white onion, grated
  • 1 leek, finely chopped
  • 2 cloves garlic, minced
  •  1/4 cup fresh parsley, finely chopped
  •  1/4 cup fresh mint, finely chopped (optional)
  • 1/4 cup fresh oregano, finely chopped
  •  1/4 cup breadcrumbs
  •  1 large egg
  •  1 tablespoon of olive oil
  •  1 tsp cumin
  •  Salt and pepper, to taste
  •  1/2 cup feta cheese, crumbled

For the Lemon Potatoes:

  • 5 large potatoes, peeled and cut into wedges
  •  1/2 cup olive oil
  •  1/2 cup fresh lemon juice
  •  2 cloves garlic, minced
  • Handful of fresh oregano sprigs
  •  Salt and pepper, to taste
  •  1/2 cup chicken broth or vegetable broth
  • 1/4 cup of water

Method:

1. Prepare the Biftekia (Meat Patties):

In a large bowl, combine the ground beef & pork mix, grated onion, diced leek, minced garlic, parsley, mint, oregano, breadcrumbs, egg, olive oil, oregano, cumin, salt, and pepper. Mix until all ingredients are well combined.

2. Divide the meat mixture into 7 or 8 equal portions. Take one portion and flatten it in your hand. Place a small amount of crumbled feta cheese in the center and fold the meat around it, forming a patty. Ensure the cheese is fully enclosed within the meat. Repeat with the remaining portions. Preheat your oven to 375°F (190°C).

3. Prepare the Lemon Potatoes:

Arrange the potato wedges in a large baking dish in a single layer.

4. Whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a small bowl. Pour the mixture over the potatoes and toss to coat evenly. I like to add freshly chopped oregano to the mix for extra flavor.

5. Mix the chicken broth and water together and then pour over the potatoes. Drizzle a bit more olive oil over the mixture.

6. Cook the Biftekia and Potatoes:

Place the biftekia over the potatoes in the baking dish.

7. Bake in the preheated oven for 45-50 minutes or until the potatoes are tender and golden brown and the biftekia are cooked through. Turn the biftekia halfway through cooking to ensure even browning. If you find that your potatoes are getting too brown, cover the dish with foil and continue cooking until biftekia are done.

8. Serve the feta-stuffed biftekia hot, alongside the lemon potatoes. Garnish with additional fresh parsley or fresh oregano if you like.

Notes:

  • You can remove the breadcrumbs if you like to make this dish gluten-free. 
  • Any cheese works well with the stuffed hamburgers, but we do love our feta! 
  • The more herbs you use in this dish, the better!
