Equipment

  • 1 Cocktail muddler
  • 1 Cocktail shaker
  • 1 Cocktail glass

Ingredients

  • 1 Bunch of fresh mint
  • 2 teaspoons demerara sugar or organic sugar
  • 2 limes (reserve the juice)
  • 1 lemon (reserve the juice)
  • 1 1/2 ounces Metaxa liquor
  • Handful crushed ice cubes
  • 1 ounce plain club soda or you can use any sparkling water

Instructions

  • In a cocktail shaker or glass, muddle the mint and sugar. Make sure the mint leaves are really mixed into the sugar. This will bring out the oils of the mint leaves.
  • Add the lime and lemon juice along with the Metaxa. Shake the mixture well, then strain into a large glass filled with crushed ice.
  • Pour club soda over the mixture and serve with fresh mint.

Notes

  • You can use more mint if you like for a tasty minty cocktail!
  • If you don't have club soda, you can use the sparkling water, such as La Croix (I love the lime flavored one)
  • Demerara sugar works well when muddling the sugar and mint together, but you can use any type of sugar you prefer.
