Fava Pantremeni Dip Recipe

Today I am sharing a beautiful Greek dip that involves yellow split peas. Such a delicious dip to enjoy by itself, with crackers, or even as a wrap. Did you know yellow split peas are an excellent source of protein? Check out more information on the benefits here.

Fava Padremeni – Φάβα ΠαντÏεμÎνη
A recipe from my second cookbook A Drop of Ladi & My Greek Soul.
Translating to married fava, “padremeni†a beautiful traditional Greek dish made with yellow split peas. I’ve had a very tasty fava in Santorini & Crete.
Servings: 8
Ingredients:
- 2 cups yellow split peas, cleaned and washed
- 3 medium scallions, chopped (see notes)
- 6 cloves garlic, whole
- ½ cup olive oil (see notes)
- 1 tablespoon of honey
- 3 tablespoons fresh lemon juice or white vinegar
- 1 teaspoon paprika
- 1 teaspoon Greek oregano or rosemary
- Salt & pepper to taste (I prefer freshly cracked pepper)
- Optional: A teaspoon of turmeric powder
Method:
- Place the split peas into a large pot with enough water to cover them (about 5 cups). Add a pinch of salt to the water and cook over high heat until the mixture comes to a boil.
- Let the peas boil for about 5-8 minutes and remove any foamy water from the surface. Add the scallions, whole garlic, and honey. Mix to combine and then lower the heat. Cook over medium-low heat for about 20 minutes or until peas are tender. Taste to see if the mixture needs any seasoning. Keep in mind you want to reserve at least 1/4 cup of liquid.
- Once the peas are tender transfer to a blender. Add olive oil, lemon juice, paprika, oregano, salt, pepper, and turmeric. Blend until the mixture is smooth.
- Serve with a drizzle of olive oil. Best served with pita bread, crackers, or vegetables.
Make my caramelized fig and onion topping
- 2 tablespoons of olive oil
- 1/2 red onion, sliced
- 6-7 medium size figs, diced
- 2 tablespoons of honey
- A pinch of sea salt
Method:
In a large pan drizzle olive oil and place over medium heat. Add the onions, figs, honey, and salt to the pan. Mix to combine and cook until onions are soft. Remove from the heat and serve over the fava dip.
Notes:
- You can use any fresh herbs you love! I like oregano and rosemary for this dish.
- A few good replacements for olive oil would be avocado, and or grapseed oil.
- I use the brand Arosis fava beans which is available on Amazon or you can head out to your local international market and search for yellow split peas.
- I love shallots in this dish but you can also use leeks or white onion.
- Try the fig & onion topping as it pairs nicely with the dip.
