Greek Sweet Potato Mashed Bites Recipe

Greek Sweet Potato Mashed Bites Recipe for Day 5 of the twelve days of Christmas meze.

These Greek Sweet Potato Mashed Bites are a flavorful fusion of savory and creamy, perfect for any festive gathering. Packed with Mediterranean flavors like tangy feta, briny Kalamata olives, and aromatic herbs, each bite feels like a mini holiday escape to Greece. So tasty and beautifully golden, they’ll disappear faster than you can say “Kali Orexi!”

 Ingredients:

  • 4 large sweet potatoes, peeled and cut into 2-inch pieces
  • 3 tablespoons unsalted butter
  • 3 large eggs
  • 4 tablespoons of heavy cream
  • 1/4 cup Kalamata olives, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup of cheddar or havarti cheese, diced
  • 1/4 cup sundried tomatoes, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup spring onions (green onions), finely chopped
  • 2 sprigs fresh oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh dill, for garnish
  • Kalamata olives, sliced for garnish

Method:

1. Preheat the oven to 400°F (200°C). Line a 12-cup cupcake pan and lightly grease it with nonstick spray or olive oil.

2. Bring a large pot of salted water to a boil. Add the sweet potatoes and cook until fork-tender, about 15-20 minutes. Drain well.

3. Transfer the cooked sweet potatoes to a mixing bowl. Mash with butter until smooth using a potato masher or fork.

4. Add the eggs, cream, Kalamata olives, feta cheese, cheddar cheese, sundried tomatoes, dill, spring onions, oregano, salt, and black pepper. Mix until evenly combined.

5. Let the mixture cool slightly, then using an ice cream scooper add about 1/4 cup of filling to each muffin pan. Note: If you don’t have a muffin pan then use a baking sheet lined with parchment paper. Shape by hand into a ball and then place onto a baking sheet.

8. Place the baking sheet in the middle rack of the oven. Bake for 20-25 minutes or until golden and crispy outside. Halfway between baking turn the heat up to 425 degrees and cook until golden brown.

9. Garnish with fresh dill and Kalamata slices.

Notes:

  • This recipe is gluten-free!
  • You can replace sweet potatoes with russet potatoes.
  • The more herbs the better!
  • Make ahead, and freeze until ready to use.
  • Add panko breadcrumbs to the top for crunch if you like!
