Whipped Feta Cucumber Bites Recipe
Servings: 4-6
Ingredients:
Whipped Feta Cucumber Bites
Ingredients:
- 2-3 large cucumbers, sliced into 1/2-inch rounds
- 4 oz cream cheese, softened
- 4 oz feta cheese
- 2 tbsp heavy cream
- 1 tbsp fresh lemon juice
- Pinch of salt and pepper
- 1 tbsp finely chopped herbs (parsley, dill, or chives)
- Sun-dried tomatoes, thinly sliced into ribbons
- Fresh dill or chives for garnish
- A drizzle of extra virgin olive oil
- Balsamic reduction
Instructions:
- Slice cucumbers into 1/2-inch rounds (adjust thickness to preference). Arrange them on your serving plate.
- Combine cream cheese, feta, heavy cream, lemon juice, salt, pepper, and herbs in a food processor. Blend until creamy. Transfer the filling into a piping bag. Use a Wilton piping bag with a tip for convenience.
- Pipe a generous dollop of whipped feta onto each cucumber slice. Top with sun-dried tomato ribbons.
- Add a sprig of dill or a sprinkle of chopped chives on each bite. Finish with a drizzle of olive oil & a drop of balsamic reduction.
- These elegant bites are perfect for any gathering and highlight Mediterranean flavors beautifully!
