No-Bake Lemon Lime Greek Cheesecake with Elona Foods Koulourakia Crust 🍋💚


A light, creamy, no-bake cheesecake with a buttery Greek cookie crust made from Elona Foods Koulourakia. It’s the perfect Mediterranean-inspired dessert for warm days.

No Bake Lemon Lime Cheesecake Recipe
Servings: 1 large cheesecake
Pie Crust Ingredients:
- 7–8 Elona Foods Koulourakia cookies
- 4 tablespoons unsalted butter, melted
- 1/2 teaspoon ground cinnamon
- 1 pinch of fine salt
Cheesecake Filling Ingredients:
- 8 ounces cream cheese, softened
- 1 cup plain Greek yogurt (see notes)
- 1/4 cup honey (or more to taste)
- 1 teaspoon pure vanilla extract
- Zest of 1 lemon
- Zest of 1 lime
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- Garnish with fresh lime or lemon slices
Method:
1. Place the koulourakia cookies into a food processor and pulse until fine crumbs form. Mix with the melted butter and cinnamon until evenly coated.
2. Firmly press the crumb mixture into the bottom of an 8-inch springform pan or pie dish. Refrigerate for 20–30 minutes to set.
3. In a large bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, honey, vanilla, lemon zest, lime zest, lemon juice, and lime juice. Mix until creamy and well combined.
4. Spread the filling evenly over the chilled crust and smooth the top.
5. Refrigerate for at least 24 hours or until fully set.
6. Before serving, garnish with extra citrus zest, crushed koulourakia, fresh mint, or thin citrus slices.
Notes:
- For an even firmer no-bake cheesecake, fold in 1/2 cup of whipped heavy cream after mixing the filling ingredients. This creates a lighter, mousse-like texture while helping the cheesecake hold its shape beautifully.
- I used lemon flavored yogurt but you can use any flavor you love.
- I like to chill this cheesecake for about 24 hours covered in the refrigerator to set.
- You can also pop it into the freezer for a few minutes, to really give it a good cold set.
- If you need more cookies, add them to the food processor. I normally use between 7-8 to make my cheesecake. Ultimately, you can use graham crackers if you can’t purchase Elona Foods koulourakia cookies.
