Today’s Featured Recipe Thursday!!!!

Today I am featuring an authentic Greek Dish. This recipe comes from Susanna K. from Georgia. Thank you Susanna for this amazing recipe.

Mediterranean Stuffed Tomatoes Recipe-

Serves- 6

Ingredients:

2 quarts of water

1 1/3 cup of orzo

1 1/4 cup of fresh basil

3 garlic cloves- minced

1 1/4 cup of dill

1/2 cup of parmesan cheese

2 tsp. of cumin

1/4 cup of olive oil

6 large tomatoes

Sea salt & pepper to taste

1 container of crumbled feta cheese

1/2 cup of kalamata olives

1 lemon- juiced

Directions:

Bring the water to a boil in a pot. Add in the orzo, and simmer for about 7 or 8 minutes. While the orzo is cooking, in a food processor or blender combine the basil, dill, garlic, and Parmesan cheese. Mix all the ingredients to combine. Slowly add in the olive oil, and add salt, pepper and cumin. Next drain the orzo, and toss a bit of olive oil in the orzo and mix.

Remove each top off the tomatoes and set aside. Make sure to scoop out all of the pulp and set aside. Combine the orzo, basil mix, and feta and mix to combine. Place each tomato in a baking dish with a bit of olive oil added to the bottom of the dish. Stuff each tomato with the orzo filling to the rim. Add the tops back on to the tomatoes and place in an oven on 400 degrees and cook for about 20 minutes or until golden brown on top. Remove from oven and you can serve with fresh parsley or top it off with some plain Greek yogurt. Squeeze the lemon juice over the top of the tomatoes. (Super yummy.)
