Featured Recipe Thursday…. WOO HOOOOO!!
Today’s featured recipe is from a Nevada home cook that loves to cook on a daily basis and enjoys coming up with new recipes. Thank you Cheryl for this great recipe.
Herbed Chicken & Greek Salad Recipe-
1 pound of skinless and boneless chicken breast- cut in cubes
7 cups chopped romaine lettuce
4 tablespoons of fresh lemon juice
1 1/4 cup of Greek plain yogurt
1 garlic clove- minced
1 cup of chopped cucumber, peeled – diced
1 cup of grape tomatoes- halved
10 kalamata olives- halved/ pitted
1/4 red onion chopped
1/3 cup of Feta cheese- crumbled
1/4 cup of Parmesan cheese- shredded
1 tsp. of cumin
Salt & pepper
2 tsp. of fresh basil
2 tsp. of fresh oregano
1/3 cup of olive oil
Prepare the marinade. In a small bowl, prepare the oil, herbs, garlic, cumin and salt and pepper.(Whisk to combine.) In a medium pan, over medium high heat, spray the pan with a little cooking spray or olive oil, and add the chicken… Add half the marinade over the chicken and sauté until the chicken is done. Let the chicken cool, and then add the remaining marinade to the chicken. Add the chicken to a medium size bowl, and place the lemon juice and yogurt into the bowl. Mix until combined. Add cucumbers, tomatoes, red onion and kalamata olives. Last, add in the romaine lettuce and the cheeses.
*You can top this off with some fresh basil.
