Creamed Spinach with Greek Yogurt Recipe

Creamed Spinach Recipe
Servings: 4
Ingredients:
- 2 tablespoons of butter or olive oil
- 2 tablespoons of all-purpose flour
- 2/3 cup of chicken broth or vegetable broth
- 1 large (12 oz) bag of spinach, fresh or frozen
- 1 garlic- minced
- 1/4 cup of sauteed onions (see notes)
- 2/3 cup of Greek yogurt
- sea salt & ground pepper to taste
- For heat add a pinch of chili flake powder
Method:
- In a saucepan, melt the butter add the flour and whisk to make a roux. Slowly whisk in the chicken broth and stir to combine.
- Bring to a boil and then reduce the heat to simmer and add the spinach.
- Cook until the spinach is wilted, and add in the garlic, yogurt, and seasonings. Cook for about 2 minutes, then remove from heat and serve. You can keep this creamed spinach in the refrigerator in a sealed container for up to 3 days.

Notes:
- I like to saute my Vidalia onions before making the roux. If you don’t have Vidalia you can use any white or yellow onions.
- If you don’t want to use chicken broth feel free to replace with vegetable broth instead.
