Tσικνοπέμπτη- Prawn Souvlaki

Happy “smoked Thursday” better known as Τσικνοπέμπτη in Greece. If you are in Greece now I bet you smell the aromas of smoked meats lingering in the air while walking around Athens or surrounding areas. Although this is the day of bbq meats, I decided to listen to my Instagram followers and they asked me to share a recipe for prawn souvlaki. This recipe can be found in my second cookbook- A Drop of Ladi & My Greek Soul.

Barbequed Prawn Souvlaki Recipe

Ingredients:

  • 1 pound of cleaned and deveined prawns
  • 1/4 cup of Greek extra virgin olive oil
  • Juice from 1 lemon
  • 1 teaspoon of oregano
  • 2 garlic cloves, minced
  • Pinch of salt
  • Ground black pepper
  • Pinch cayenne pepper
  • Chopped parsley (to serve)
  • Lemon juice (to serve)
  • Wooden skewers

Method:

  1. You can use fresh or frozen prawns for this recipe. If you choose frozen, defrost under cold water for a few minutes.
  2. Peel and devein the fresh prawns. Set aside on a large plate.
  3. In a small bowl whisk together the olive oil, lemon juice, oregano, garlic, salt, and peppers. Prepare the wooden skewers by soaking them in water for at least 10 minutes. Skewer the prawns and brush them with a marinade on both sides.
  4. Chill for about 30 minutes to soak in the flavors. Season with more salt and pepper.
  5. Preheat your grill on medium. Place aluminum foil over the tray, and lay the skewers on the tray.
  6. Cook prawns on each side for 2-3 minutes or until fully cooked. Remove from heat and serve with fresh top parsley and lemon juice.
