Krystina’s Blender Salsa Recipe

Happy weekend! Today on the blog, we have a delicious salsa recipe that will have you and your family asking for more.

Note: You might wonder why I’m posting so many tomato recipes on Instagram. Well, our tomato season seems to be never-ending, and we have huge heirlooms coming in again, so there’s the answer. I hope you enjoy these recipes as much as I do.

Blender Salsa: Firstly, this recipe is made in two important steps: roasting the vegetables in the oven and blending.

Here’s a simple and delicious favorite tomato salsa recipe for you to try!

Krystina’s Blender Salsa Recipe

Servings: 4-6

Ingredients:

  •  4 large ripe tomatoes, quartered (I used heirloom tomatoes)
  •  1 small red onion, quartered
  •  2 cloves garlic
  •  1 jalapeà±o (deseeded for less heat, optional) or a pinch of chili flakes
  •  1/2 cup fresh cilantro leaves
  • Juice of 1 lime
  •  Salt and pepper to taste
  •  1 teaspoon sugar or honey

 Method:

1. Prepare a baking sheet and line it with foil. Brush about 2 tablespoons of olive oil over the foil. Add the prepared tomatoes, onions, garlic, and jalapeno or chili flakes. Toss the mixture in oil a bit and then bake in the oven at 375 degrees for about 15 minutes then turn the heat up to broil and bake an additional 3-5 minutes. Please keep an eye on broil mode!  Remove from the heat and let it cool.
2. Place the roasted mixture inside a blender. Pour in the lime juice and season with salt, pepper, cilantro, sugar, or honey.
3. Blend on a low setting, pulsing until you reach your desired consistency (chunky or smooth).
4. Taste and adjust seasoning if needed.
5. Refrigerate for an hour to allow the flavors to develop and then serve.
