**Please make sure to read the notes below
Ingredients:
- 4 large flour tortillas (or your favorite type)
- 8 slices cooked turkey
- 1/2 cup cranberry sauce (homemade or canned)
- 8 slices of Pepper Jack cheese
- 1/2 cup cream cheese, softened (optional for extra creaminess)
- 1 cup fresh spinach or arugula (optional for a fresh crunch)
- 1/4 cup tablespoon Dijon mustard (optional for a little tang)
- Salt and pepper to taste
- Fresh herbs (optional, such as thyme or rosemary for extra holiday flavor)
Method:
1. Lay the tortillas flat on a clean surface or cutting board. If you want extra soft and pliable, heat them slightly in the microwave for about 10-15 seconds.
2. Spread the base: Start by spreading a thin layer of cream cheese on each tortilla (if using). If you’re skipping the cream cheese, spread a light layer of Dijon mustard for a tangy kick.
3. Spoon a generous amount of cranberry sauce into the center of each tortilla, spreading it evenly. This will give the wrap that perfect sweet-tart flavor.
4. Add the sliced turkey to the cranberry sauce. You can use leftovers or freshly cooked turkey!
5. Place two slices of Pepper Jack cheese over the turkey. The cheese will add a nice creamy and spicy kick to balance the sweetness of the cranberry.
6. If you’re adding fresh spinach or arugula, scatter it on the cheese for a pop of color and a fresh crunch.
7. Sprinkle a little salt and pepper to taste. If using freshly chopped herbs you can add them
8. Carefully fold in the sides of the tortilla, then roll it up tightly into a wrap. Slice into halves or thirds for bite-sized snacks or serve as whole wraps.
9. These wraps are perfect as a snack, appetizer, or lunch! Serve them on a platter, or wrap them in parchment paper for a festive touch.
Tips: If you like your wraps warm, grill them lightly in a pan for a crispy finish.
Make them ahead of time and store them in the fridge for up to 2 hours before serving. Add a little more spice with jalapeà±o slices or a drizzle of hot sauce if you like it extra zesty.
Enjoy!!
Notes:
When adding Dijon mustard make sure you add 1 tablespoon to each tortilla. When adding cream cheese, divide the 1/2 cup between 4 tortillas. The same applies to the cranberry sauce and the spinach. Make sure you divide all of those ingredients into 4 tortillas.
Make it vegetarian! You can use the following combinations:
- Feta cheese- kalamata olives- and sliced cucumbers
- Beet- goat cheese-arugula or spinach
- Mozzarella slices- tomato slices- arugula- pesto dip
You can let your imagination run wild with whatever ingredients you choose! Get the kiddos involved in the fun and let them enjoy creating their masterpieces too.
