Greek Meze Recipes – Mediterranean Summer Series

We’re still going strong with our Mediterranean Summer Series, and today I’m sharing two delicious Greek meze recipes with you!

First up, we have Grilled Zucchini & Squash—simple, fresh, and so easy to put together. A little olive oil, lemon, oregano, and feta take these beautiful summer vegetables to the next level. They’re perfect for your next barbecue or as an easy side dish for a summer meal.

The second recipe is one I’m especially excited to share because it is SOOO GOOD! Seriously, all the flavors of summer come together in this one delicious dish. Juicy grape tomatoes, creamy feta, fresh oregano, garlic, and good-quality olive oil are cooked together to create the perfect Greek meze. And whatever you do, don’t forget the bread! You’ll want something fresh and crusty to soak up all those delicious tomato juices.

Gather your best summer zucchini and squash, fire up the grill, and let’s get cooking!

Grilled Summer Zucchini & Squash

Servings: 4

Ingredients:

  • 2 large zucchini, cut into 1-inch strips
  • 2 large yellow squash, cut into 1-inch strips
  • 2 garlic cloves, halved
  • ¼ cup extra-virgin olive oil, divided
  • ½ lemon, juiced (reserve the juice)
  • A handful of fresh oregano leaves
  • ½ cup crumbled feta cheese
  • Salt and freshly ground black pepper, to taste
  • Balsamic vinegar, optional

Method:

  1. Prepare the vegetables and place them on a large baking sheet lined with foil. Drizzle 2–3 tablespoons of the olive oil over the zucchini and squash, then rub the halved garlic cloves over the vegetables to infuse them with flavor. Let the vegetables sit for about 5 minutes.
  2. Preheat your barbecue or grill to medium heat. Once the grill is hot, place the zucchini and squash directly onto the grill. The olive oil should help prevent the vegetables from sticking, but you can also use a grill mat or a piece of foil if desired.
  3. Grill the vegetables for a few minutes on each side, until they are tender and have beautiful grill marks. Keep an eye on them so they don’t become too soft.
  4. Once cooked, remove the vegetables from the grill and arrange them on a large serving platter. We like to slightly overlap the zucchini and squash to create a beautiful presentation.
  5. Drizzle the remaining olive oil and fresh lemon juice over the vegetables. Top with crumbled feta and fresh oregano, then season with salt and freshly ground black pepper.
  6. For an extra burst of flavor, add a small drizzle of balsamic vinegar if desired.
  7. Serve immediately and enjoy!

Krystina’s Tomato Feta Meze Dip Recipe

Servings: 4

This simple and delicious Greek-inspired meze dip is packed with juicy tomatoes, creamy feta, garlic, onion, and fresh oregano. It’s quick to prepare and perfect served warm with fresh pita or your favorite crusty bread!

Ingredients:

  • 4 tablespoons extra-virgin olive oil
  • 2 cups grape tomatoes, halved
  • 2 garlic cloves, minced
  • ½ white or red onion, diced
  • 2 green onions, thinly sliced
  • 1 cup crumbled feta cheese
  • 10 fresh oregano leaves
  • Salt and freshly cracked black pepper, to taste
  • Fresh pita or crusty bread, for serving

Method:

  1. In a large saucepan, heat the olive oil over medium heat. Add the tomatoes, garlic, onion, and green onions. Give everything a good stir and sauté for about 5 minutes, allowing the tomatoes to soften and release their juices.
  2. Season with salt and freshly cracked black pepper. Add 3–4 fresh oregano leaves and continue cooking for another minute or two. The tomatoes should become soft and juicy while still holding some of their shape. This slow cooking method gives the tomatoes a delicious confit-style texture and flavor.
  3. Remove the pan from the heat and transfer the tomato mixture to a serving dish.
  4. Sprinkle the crumbled feta cheese generously over the top, followed by the remaining fresh oregano leaves. If desired, drizzle with a little extra-virgin olive oil for an extra touch of flavor.
  5. Serve warm with fresh pita, toasted bread, or your favorite crusty bread for dipping. This is the perfect Greek meze to share with family and friends. Enjoy!
