White Rice Muffin Recipe-
Prep Time- 5 minutes
Bake Time- 17-20 minutes
1/2 cup of milk or any fruit juice
1 tsp. of vanilla
1 tsp. of grated lemon or orange
2 tbsp. of sugar
2 tbsp. of canola oil or veg oil
1 cup of white rice flour
2 tsp. of baking powder
1/2 tsp. of salt
2 tbsp. of chopped walnuts or pecans
1/4 cup of dried blueberries or any dried fruit
2 tbsp. of honey for the top
Preheat oven to 425 degrees. Lightly grease the muffin pan. Set aside. In a mixing bowl, place all of the ingredients and mix well. Pour into prepared muffin tin, bake for 17- 20 min. allow the muffins to cool and top it off with some honey. Enjoy!
