Just got done making Mediterranean Mini Omelets.
I started off making French toast this morning, then I ventured off to making these Mediterranean omelets. My boyfriend came in the kitchen, and he was like what are you up to now. HAHAAA. If I am not on here posting, I am most likely in the kitchen coming up with new ideas and recipes.
Enjoy these little mini omelettas- (as we would say in Greek.)

Mediterranean Mini Omelets Recipe-
Ingredients:
1/2 red pepper diced
1/3 cup of white mushrooms
5 slices of pepper jack cheese or crumbled feta cheese
1/4 cup of white onion- diced
A few kalamata olives- pitted and diced
Parsley / dill minced
2 eggs- beaten
3/4 cup of milk
Salt & pepper
2 tsp of olive oil
Prepare-
In a medium size bowl, whisk the eggs and milk together, to combine. Next, Add the oil to a pan, sauté the peppers, mushrooms, and onion, and herbs and cook until the onion is translucent. Remove from heat, let it slightly cool and add to the egg mixture. Add in the cheese. Then get a muffin pan, enough for about 12 mini omelets. Spray each pan with cooking spray. Scoop the mixture, I use an ice cream scooper, and add about 3/4 of the mixture to each muffin pan. Place your oven temp on 375 degrees, and bake until they are golden brown on top. Remove from the oven and when cooled, add the kalamata olives to the top.
