~Summer Jam~

I know it is that time of the season to make jam. I thought I would share this easy jam recipe with you and tell your family and friends to join in the fun of making jam. 

Peach Jam- μαρμελάδα ροδάκινο

  • 6 peaches
  • 3 cups of sugar
  • 2 tbsp of lemon juice
  • 1 tsp of vanilla
  • 1/4 tsp of salt

In a large pot, place the peaches into the pot and boil for about 1 minute. 

Rinse the peaches over cold water and peel. Remove the pits and then cut each peach into wedges or cubes. 

Place peaches in a food processor and coarsely chop them. Place the peaches in a saucepan along with the sugar, vanilla, lemon juice and salt. 

Simmer over medium heat, making sure to stir occasionally, and until thickened. Cook for about 25 to 30 minutes.

Place sauce into mason jars and let cool. Place in refrigerator and the jam is good up to 1 month. 

Yields about 4 cups.
