- Juice from 1 lemon
- 1 teaspoon of fresh oregano, finely chopped
- 2 garlic cloves, minced
- Pinch of salt
- Ground black pepper
- Pinch cayenne pepper
- Chopped parsley (to serve)
- Lemon juice (to serve)
- Wooden skewers
Method:
- You can use fresh or frozen prawns for this recipe. If you choose frozen, defrost under cold water for a few minutes.
- Peel and devein the fresh prawns. Set aside on a large plate.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, garlic, salt, and peppers. Soak the wooden skewers in water for at least 10 minutes. Skewer the prawns and brush them with marinade on both sides.
- Chill for about 30 minutes to soak in the flavors. Season with more salt and pepper.
- Preheat your grill to medium. Place aluminum foil over the tray, and lay the skewers over the top.
- Cook prawns on each side for 2-3 minutes or until fully cooked. Remove from heat and serve with fresh top parsley and lemon juice.
