Blood Orange Fennel Mediterranean Salad Recipe

Hello! On tonight’s post is a special salad recipe using Molon Lave extra virgin olive oil & Kalamon olives. This is such a simple yet tasty salad recipe that you can make in minutes. The Molon Lave extra virgin olive oil really enhances the ingredients in this salad.

The main ingredients you need for this fine salad are fennel, blood orange, small red onion, fresh mint, honey, dijon mustard, Molon Lave olive oil, and kalamon olives.

 

 

Blood Orange Fennel Mediterranean Salad Recipe

Servings: 2 

Ingredients:

  • 2 blood oranges, see method
  • 1 fennel, finely sliced (best to use a mandoline)
  • 1/4 red onion finely sliced (best to use a mandoline)
  • Handful of Molon Lave Kalamon olives
  • 1 tablespoon Dijon mustard
  • 1 tablespoon of honey
  • Juice of half the blood orange
  • 6 tablespoons of Molon Lave extra virgin olive oil
  • Pinch of salt & cracked pepper
  • Handful of fresh mint leaves

Method:

  1. Prepare the fennel. Thinly slice the fennel and red onion and place into a medium bowl.
  2. Take 1 blood orange, cut with a fruit knife the top and the bottom edges of the orange so it’s flat on the chopping board, and start cutting the side of the orange peel from the top gently to the bottom so you can see the orange flesh. Turn it and slice it into 5-6 thin round slices.
  3. In a mixing bowl, add a tablespoon of Dijon mustard, a tablespoon of honey, juice of half blood orange, 6 tablespoons Molon Lave extra virgin olive oil, a pinch of salt and pepper, and whisk to combine. Pour half the dressing into the bowl with fennel and onion and mix gently.
  4. Place half of the fennel onion mix on a plate almost flat, add 3 slices of orange, the rest of the fennel-onion mix on top lifting it. Decorate with the rest of the orange slices on top, 5-6 olives, and 4-5 mint leaves, crack some black pepper, and then serve with a tablespoon of dressing.

Notes:

  • If you can’t get blood oranges at your local store replace them with clementine or any orange available.
  • If you know how to use a mandoline best to slice the onion and fennel that way.
