Infused Rosemary Olive Oil Recipe

The weekend is coming up and our weather is looking quite summery. More outdoor cooking coming up from Kouzounas Kitchen, and exciting recipes. Here’s a new recipe using one of our new favorite Greek olives from the Peloponnese; Molon Lave extra virgin olive oil. If you missed my last post on Molon Lave check it out here.
Where are my herb lovers? More specifically, rosemary fans?? If you love rosemary, then you will appreciate this new infused rosemary olive oil recipe. Please read below for notes.
Why infused rosemary recipe rocks:
You can use this infused oil in savory or sweet dishes. The list goes on and on but here are a few favorites of mine;
- Dakos (Greek bruschetta)
- Dips
- Croutons
- Drizzle over soups, and sandwiches, or dip your favorite bread in this infused oil.
- Marinate your favorite protein or vegetables
- Yummy in mashed potatoes or baked potatoes
- Cakes, cookies, or savory scones
- Try infused rosemary oil in breadsticks!
Infused Rosemary Olive Oil Tips
- While this recipe might sound super easy to make, there are a few steps you should take to make the best quality infused oil.
- Make sure to use fresh rosemary that has been cleaned before using. If you have any moisture in the rosemary, that will cause problems. So, do not forget to dry the leaves well.
- A good quality olive oil such as Molon Lave is key.

Infused Rosemary Olive Oil Recipe
Ingredients:
- 2 cups of olive oil preferably Molon Lave
- 5-6 sprigs of fresh rosemary (see notes)
- Sterile glass bottle (preferably dark bottle)
Method:
- In a large pot add the rosemary sprigs, and then pour the olive oil over the top. Place over low heat, and cook for approximately 15 minutes. Make sure you do not let your mixture boil as that will ruin the olive oil.
- Remove from the heat and let the rosemary bathe inside the oil for about an hour. When ready, remove the rosemary sprigs and gently pour the olive oil inside a sterile cleaned glass jar. Store olive oil in the refrigerator for up to 2 weeks. Usually, we go through this olive oil fast, so we never have to refrigerate it. 🙂
