Light & Fluffy Healthier Waffles Recipe

The aroma of these waffles is just so heavenly! Make these for breakfast or brunch and top them off with fresh berries and maple syrup. 

Light & Fluffy Healthier Waffles Recipe

Servings: 6-8

Ingredients:

  • 4 eggs
  •  1/3 cup fresh orange juice
  •  1 teaspoon vanilla extract
  •  1 1/4 cups milk (any type you prefer)
  •  1 1/2 cups all-purpose flour
  •  1/2 cup wheat flour
  •  1 teaspoon baking powder
  •  1 pinch salt

Method:

1. Separate the eggs, placing the whites in a large bowl and setting aside the yolks in another bowl. Beat the egg whites for about 2 minutes or until fluffy.

2. In a separate bowl, mix the egg yolks with the orange juice and vanilla extract. Whisk to combine, then add the milk and continue whisking until smooth.

3. In another bowl, combine all the dry ingredients. Gradually add this dry mixture to the egg yolk mixture in three parts, stirring until smooth and clump-free. Gently fold the beaten egg whites into the batter to keep it fluffy.

4. Preheat the waffle iron. Pour about 1/2 cup of batter onto the iron plate, leaving some space to avoid overflow. Cook until the waffle is golden brown. Most waffle irons will indicate when they are done.

5. Serve the waffles warm with fresh berries, maple syrup, or honey, and a sprinkle of cinnamon.
