If you are much like me, I am always at the last minute for Christmas! I ordered my gift cards for some family members and finished baking 2 Spanakopita pies at almost midnight.  If you are looking for last-minute Greek cookie recipes, I have you ready!  Check out this idea for infused peppermint candy kourambiedes. Here is the recipe for traditional kourambiedes. 

 

Peppermint Candy Cookies instructions:

 

  1. Prepare the cookie dough as directed in the recipe, stopping at Step 9 (shaping the cookies into balls).
  2. Once shaped, gently press your thumb into the center of each cookie dough ball to create a small indentation.
  3. Add ½ teaspoon of Andes peppermint crunch candy into the indentation of each cookie.
  4. Fold the edges of the cookie dough over the peppermint center, sealing it completely.
  5. Roll the dough gently in your hands to reshape it into a ball.
  6. Bake the cookies according to the recipe instructions.

Notes:

  • You can use any peppermint candy you like, but Andes brand seems to work best for us. Be sure to coarsely chop the candy so you can place it in the center of the cookie dough.
