Raspberry Coulis & Raspberry Baklava

Today I am sharing one of my favorite baklava flavors; raspberry baklava! Although I have been making this for my clients for years, I never got the chance to post a recipe. So, now is the time. I must admit that I still need to try pouring the raspberry sauce over the entire baklava. Once I do this, I will get back to you guys with the results. I decided to use my same recipe and syrup but then drizzled the raspberry coulis over the baklava. The results… a yummy baklava with a cool red marbled look. It is perfect for Valentine’s Day. If you are a Baklava fan, you really should try this out.

The raspberry sauce can be made ahead of time and I do suggest that. You can refrigerate the sauce before you use it.

Raspberry Coulis Sauce

  • 1/2 cup of organic sugar
  • 1/4 cup of water
  • 2 cups of raspberries (you can use fresh or frozen)
  • 2 teaspoons of lemon juice

Method:

  1. Add all the ingredients over the stovetop in a medium pot. Cook over medium heat until the mixture becomes thick. About 18-20 minutes.
  2. Once the mixture is thick, remove it from the heat and let it cool slightly. Strain the coulis through a fine mesh strainer. Chill in the refrigerator until ready to use.

Once the baklava is ready and cooled down, you can then drizzle the raspberry sauce over the top. It is always nice to use a piping bag so you can make beautiful lines. Serve when ready.

Notes:

  • You can cut the amount of baklava syrup you use because the raspberry syrup is sweet too.
  • If you don’t want to use raspberries you can use any berry of your choice.
  • Do not refrigerate or freeze cooked baklava as it will become soggy. Place inside a sealed container and it will stay good for up to a week.
