Ingredients:
- 2 medium zucchinis, thinly sliced
- 1 cup all-purpose flour
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp garlic powder
- 2 large eggs
- 1/4 cup of heavy cream or water
- 3 cups of panko bread crumbs
- Olive oil or vegetable oil (for frying)
Method:
- Slice the zucchini thinly and pat them dry with a paper towel to remove excess moisture.
- In a bowl, mix flour, salt, pepper, paprika, oregano, and garlic powder. Set aside.
- In another bowl, prepare the egg & water together, whisk, and set aside.
- In another bowl, prepare the panko bread crumbs and set aside. From left to right on the table, you should have the following flour, egg mixture, and then panko.
- In a deep pan, heat about 1 inch of oil over medium heat.
- Dip each zucchini slice into the flour, then the egg mixture, and then panko. Fry in batches until golden and crispy (about 2 minutes)
- Remove and place on a paper towel-lined plate. Sprinkle with a pinch of salt.
- Serve hot with our homemade tzatziki dip for the perfect game-day snack!
Tips:
- When dipping the zucchini slices in the three mixtures, make sure each side is evenly coated.
- Want a healthier version? Bake at 400°F for 20 minutes or air-fry at 375°F for 10 minutes!
