Ingredients:

  • 2 medium zucchinis, thinly sliced
  • 1 cup all-purpose flour
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 2 large eggs
  • 1/4 cup of heavy cream or water
  • 3 cups of panko bread crumbs
  • Olive oil or vegetable oil (for frying)

Method:

  1. Slice the zucchini thinly and pat them dry with a paper towel to remove excess moisture.
  2. In a bowl, mix flour, salt, pepper, paprika, oregano, and garlic powder. Set aside.
  3. In another bowl, prepare the egg & water together, whisk, and set aside.
  4. In another bowl, prepare the panko bread crumbs and set aside. From left to right on the table, you should have the following flour, egg mixture, and then panko.
  5. In a deep pan, heat about 1 inch of oil over medium heat.
  6.  Dip each zucchini slice into the flour, then the egg mixture, and then panko. Fry in batches until golden and crispy (about 2 minutes)
  7.  Remove and place on a paper towel-lined plate. Sprinkle with a pinch of salt.
  8. Serve hot with our homemade tzatziki dip for the perfect game-day snack!

Tips:

  • When dipping the zucchini slices in the three mixtures, make sure each side is evenly coated.
  • Want a healthier version? Bake at 400°F for 20 minutes or air-fry at 375°F for 10 minutes!
  • Pair these with our famous tzatziki dip for a Greek-inspired Super Bowl feast!
