Vegetarian Gyros (Lent Friendly) Recipe

VEGETARIAN GYROS!

Don’t knock it ’til you try it! Trust me, this is a game changer. The mushrooms surprisingly mimic the texture of gyro meat in a way you wouldn’t expect—it’s a whole new level of delicious!

Here’s a recipe for Vegetarian Gyros!  Served with oyster mushrooms, French fries, tomatoes, red onions, fluffy pita bread, and dairy-free tzatziki dip. The oyster mushrooms replace traditional gyro meat, making it perfect for Orthodox Lent.

Please note: You will need the following recipes to make these tasty gyros!

Vegetarian Gyros with Oyster Mushrooms

Servings: 4-5

Ingredients- For the Oyster Mushrooms:

  • 4 packets of the 3.2 oz of oyster mushrooms
  • 1/4 cup of olive oil (see notes)
  • Salt and pepper to taste
  • 1 lemon, reserve the juice

For the Toppings:

  • 4-5 pita bread
  • 2 1/2 cups of fried french fries (about 3 large russet potatoes)
  • 1 medium red onion, thinly sliced
  • 2 medium tomatoes, sliced
  • Dairy-free tzatziki dip (replace with your favorite dairy-free yogurt)

Method:

1. Prepare the Oyster Mushrooms:

  1. Tear the oyster mushrooms into thin strips. Do not chop them, just leave them in strips and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the mushrooms and cook for 5-7 minutes, stirring occasionally, until they soften and become golden brown. Once they are golden brown, add the salt, pepper, and lemon juice. Cook until crispy then set aside on a large plate.

3. Prepare the Toppings:

  1. Fry the potatoes until crispy and sprinkle with dried oregano, set aside.
  2. Thinly slice the red onion and set aside.
  3. Thinly slice the tomatoes and set aside.
  4. Prepare the tzatziki dip. The recipe is above.
  5. Warm your pita bread on a skillet or in the oven for 1-2 minutes until soft and warm. The recipe is above.

6. Assemble the Gyros:

  1. Place one warm pita bread onto a piece of parchment paper.
  2. Add a dollop of the tzatziki dip, then add the tomatoes, red onions, mushrooms, and fries.
  3. Optional: Spoon a generous amount of dairy-free tzatziki sauce on top.
  4. Fold the pita to enclose the filling, making sure everything stays inside.
  5. Serve immediately and enjoy!

Notes:

  • Remember that the oyster mushrooms will shrink like crazy so it is better to have more on hand. 🙂 Sometimes we use 5 packets of oyster mushrooms because it is never enough.
  • You can use any dairy-free yogurt you like but I do enjoy the cashew yogurt in replacement of Fage.
  • Add halved Kalamata olives to your gyro for a tangy flavor!
  • Make it a spicy gyro by adding in 1/4 diced jalapenos to the tzatziki dip. It is really good!

  • If you do not use olive oil in your lent recipes, use canola oil or avocado oil.
