Easy Creamy Mac & Cheese Recipe

Indulge in the ultimate comfort food with this rich and gluten-free creamy mac and cheese recipe. Easy to make, family-approved, and irresistibly cheesy—this is one dish you won’t want to miss!

Ingredients:
- 1 pound (4 1/2 cups) of mixed grated cheddar cheese & Gouda (Set aside 1/2 cup)
- 5 tablespoons of melted butter
- 3 cups of heavy cream
- 1/4 cup of water (optional)
- A pinch of paprika
- Black pepper & salt to season
- 2 sprigs of lemon thyme
- 1 package of Macaroni, I like using my latest gluten-free macaroni
- 2 tablespoons of olive oil
Method:
- Prepare the macaroni according to the package instructions. I like to cook mine Al dente, and set it aside.
- First, grate the cheddar and Gouda cheeses and set them aside.
- In a saucepan, bring the cream to a boil along with the lemon thyme, and let it simmer for a few minutes. Strain out and discard the thyme and set aside the infused cream.
- Add about 4 cups of the grated cheese & the melted butter to the cream and, using a blender, blend until smooth. Be careful not to get the mix everywhere, as that is easy to do! (If your mixture gets too thick, slowly blend in the 1/4 cup of water.)
- Mix the pasta and cream sauce in a bowl—season with salt and pepper to taste.
- Drizzle a bit of olive oil into the bottom of a glass baking dish, then add the cheesy macaroni.
- Just before placing the dish in the oven, fold in the remaining grated cheese into the pasta. Then sprinkle about 3 tablespoons of cheese over the top.
- Bake at 400°F (200°C) for a few minutes, until the cheese on top is melted and golden. Remove from the oven and serve immediately.
Notes:
- Make this mac and cheese spicy! Add a pinch of red chili peppers to the cream & thyme mixture.
- You can infuse the cream with any herbs you prefer, but lemon thyme is one of our all-time favorites!
- Make sure to reserve 1/2 cup of cheese to fold into the pasta and for the top.
