Watermelon Chicken Souvlaki
Servings: 4–5
Ingredients:
For the Chicken:
- 5 large chicken breasts, cut into 2-inch cubes
- 2 tbsp olive oil
- Salt & pepper to taste
For the Watermelon Marinade:
- 5 cups watermelon juice (seeds removed)
- 2 tbsp olive oil
- Juice of 1 lime or lemon
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- 2 tbsp cornstarch
- 1 tsp dried oregano (or fresh)
- 1 sprig of fresh mint
- 1 tsp chili flakes
- 2 garlic cloves
- 1 tsp salt
- ½ tsp black pepper
Method:
- In a large bowl, combine chicken cubes with 1 tbsp olive oil, salt, and pepper. Toss well, cover, and refrigerate for about 30 minutes.
- Blend all marinade ingredients until smooth. Strain if needed to remove extra pulp.
- Pour the blended marinade into a pot and heat over medium until it starts to thicken. Once thickened, remove from heat and let it cool.
- Pour the cooled marinade over the chicken. Cover and let it marinate for 30 minutes to 1 hour (or up to 2 days for deeper flavor!).
- Thread the marinated chicken onto skewers. Grill for 4–7 minutes, turning occasionally. Serve with a squeeze of lemon or lime.
