Shrimp & Feta Baked In The Oven Recipe-
(Garithes me Feta sto Fourno)
4 tablespoons of extra virgin olive oil
2 shallots, minced
3 garlic cloves, minced
2 pounds of large shrimp- peeled, and devained
6 roma tomatoes chopped or you can use 1 can of tomatoes
1/3 cup of red wine
3 tsp of honey
2 tsp of cinnamon
2 tbsp of ground oregano
sea salt and ground pepper
2/3 cup of feta cheese, crumbled
1 bunch of fresh mint- chopped
Preheat oven to 375 degrees or 195 c.
In a casserole dish, place shrimp inside the baking dish and drizzle about 2 tablespoons of olive oil over them. Next in a medium size bowl, mix together the herbs, seasonings, honey, red wine, tomatoes, garlic and shallots. Mix to combine and add the sauce over the shrimp. Bake for about 20 minutes or until the sauce has reduced in half and is thickened. (Five minutes prior to removing the casserole add the feta cheese and bake until golden brown.)
* This dish is great over rice.
