Feta & Ham Baked Potatoes-
4 small russet potatoes
1 package of crumbled feta cheese
1 cup diced ham
1/3 cup of green onions- chopped
1 clove of garlic minced
1/4 cup of sour cream
2 tsp of paprika
Sea salt & ground pepper
1. Pierce each potato and place in a microwave safe dish. Microwave on high for about 10-12 minutes.
2. Let cool slightly, then make a slit in the top of each of the potatoes. Scoop potatoes out of skins and place in medium bowl.
3. Mash potatoes until fairly smooth and stir in cheese, ham, onions, sour cream, herbs and seasonings.
4. Place filling inside the potatoes and bake at 375 degrees until brown.
